Chiara Lungarotti, also a famous winemaker, is one of the leading olive oil producers in all of Umbria. Made with the requisite blend of Frantoio (70%), Moraiolo (10%), and Leccino olives (20%), that are selected and certified for DOP production, and hand-picked at the veraison stage (onset of ripening), the Umbria DOP Colli Martani Extra Virgin Olive Oil from Lungarotti is a mid-bodied oil that displays a broad and balanced spectrum of sweet grass with a delayed and elongated peppery finish which creeps up in the back of the throat and sustains itself for 20 to 30 seconds, before slowly trailing off.
