The holiday cooking slump has met its match.
The time between the holidays and New Year’s is a strange span when people are not fully celebrating but not completely set back in the regular routine. Sometimes there are parties, and sometimes there are relaxing moments at home. With so much cooking and fussing this time of year, it’s easy to get decision fatigue and cringe at the thought of picking up a knife. Enter low-cook meals — easy dishes thrown together with as little effort as possible that still feel like you’re eating something real. No time leans as hard on low-cook meals as this time warp in the winter. Our solution for the cooking slump between the holidays? These almost-instant fresh pasta kits. They’re perfectly portioned for two and full of flavor, no chopping needed.
There are 5 varieties of these fresh pasta kits: Spaghetti alla Chitarra Cacio e Pepe, Spaghetti al Nero di Seppia all'Arrabbiata, Tagliatelle alla Bolognese, Tagliolini con Burro al Tartufo Bianco, and Trenette al Pesto. Each kit features a regional sauce paired with some of the fresh pasta counter's most popular shapes and styles.
Spaghetti alla Chitarra with Cacio e Pepe Sauce
Squid Ink Spaghetti with Spicy Arrabbiata Sauce
Tagliatelle with Bolognese Sauce
Tagliolini with White Truffle Butter Sauce
Trenette with Pesto Sauce
As far as low-cook meals go, these kits are as easy as boiling water. For most of the kits (like the Bolognese sauce), you'll need to heat up the sauce with a little water to help loosen it while cooking the pasta. But for other sauces (like the Pesto sauce), just add the sauce to a mixing bowl and cook your pasta. Even easier? Fresh pasta only takes minutes to cook, meaning you'll have a meal ready on the table in no time.
We chose the Tagliatelle alla Bolognese for the ultimate hearty winter dish. The Ragù Bolognese is made with sautéed onions, carrots, celery, and Prosciutto di Parma. Tomato paste and purée are added, along with beef, pork, and Montepulciano d'Abruzzo red wine. The sauce is slow-simmered until it's unbelievably tender. The fresh Tagliatelle is made with only heirloom eggs, egg yolks, and semolina flour and cooks to al dente after just a few minutes. Toss the two together and top each bowl with (included!) 18-month Parmigiano Reggiano® DOP, and dinner is ready.
