Candles in English, candele are long hollow tubes native to Naples in the region of Campania. Neighboring Pastaio di Gragnano crafts all of their pasta shapes by guiding a sheet of dough through a bronze mold and air-drying each shape for 24-48 hours.
Their shape makes them ideal with more bold flavors, such as an Arrabiata sauce, but also works with any of your favorite pasta sauces!
